This 9cm vegetable knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for preparing small vegetables, fruit and ingredients that require precise cuts featuring a straight-edge blade with a similar size to a paring knife Each knife in the series has been created using high-performance VG-MAX steel at Rockwell 60-61 with a double-bevel blade angled at 16° providing excellent edge retention and cutting performance.
