The curry paste has a rich, savoury flavour with citrus running through it. It releases the heady aroma of lemongrass, galangal and kaffir lime as it cooks. Shrimp paste delivers notes of funky umami, while spices and red chilli add heat.
Sambal curry can be made with chicken legs, thighs or breast. You could also use white fish or vegetables like aubergine and cauliflower.
